Hydration of <em>&beta;</em>-Lactoglobulin in Magnetized Water: Effect of Magnetic Treatment on the Cluster Structure of Water and Hydration Properties of Proteins

Abstract: : Toinvestigatethehydrationofproteinsinmagnetizedwater,purewaterwastreatedwithastatic magneticfield(MF)overdifferenteffectivetreatmenttime(t eff ).Viscosimetryandoxygennuclearmagneticresonance ( 17 O鄄NMR)spectrawererecorded.Thehydrationpropertiesof 茁鄄lactoglobulin(茁鄄Lg)inmagnetizedwaterwereexamined bydifferentialscanningcalorimetry(DSC)andNMR.Byincreasing t eff ,theinternalenergyofthewaterdecreased andtheconcentrationof"hydrogen鄄bonded"waterincreased.ThisresultindicatesthatMFtreatmentpromotesthe formationofwat… Show more
