Abstract:Small heat shock proteins are protective proteins produced by organisms under thermal stress. They are widely present in living organisms. Here, Hsp18, Hsp18.55 and Hsp19.5 genes were cloned from Lactobacillus plantarum and heterologous expressed in Lactococcus lactis, and their potential functions under ethanol stress were investigated.
