In vitro Antioxidant Properties of E uryale ferox Seed Shell Extracts and their Preservation Effects on Pork Sausages

Abstract: Seed kernels of Euryale ferox are considered a healthy food product in China, and the shells containing high levels of polyphenols are currently unused.
