Impact of Dairy Products and Plant-Based Alternatives on Dental Health: Food Matrix Effects

Abstract: The impact of dairy products on dental health has been researched widely and shows an important role of various constituents, as well as the specific product matrix, in maintaining and improving dental health. These include, for instance, the position of lactose as the least cariogenic fermentable sugar, the high levels of calcium and phosphate, the presence of phosphopeptides as well as the antibacterial peptides lactoferrin and lysozyme and high buffering capacity. With plant-based alternatives for dairy pro… Show more

“…Milk and dairy products have a low cariogenic potential, but also laboratory studies have suggested that milk or milk components might have cariostatic properties [19,20]. However, the results of epidemiological studies on the relationship between dental caries and the consumption of dairy products in children have been inconsistent [20][21][22][23].…”

“… 30 Milk products are included in the dietary guidelines and contain lactose as a carbohydrate, which is the least cariogenic sugar, and high levels of calcium, phosphate and casein, which may therefore favour oral health. 29 , 31 …”

“…Milk is a liquid produced by mammals to meet the nutritional needs of newborns, and it is considered the primary source of nourishment in proper proportions [ 1 ]. In addition, it is considered non-cariogenic due to the high levels of calcium and phosphorus that exhibit antimicrobial properties and increase the salivary pH [ 1 , 2 ]. Although milk contains lactose, which is moderately cariogenic, lactose is the least cariogenic fermentable sugar [ 2 ].…”

Although milk contains lactose, which is moderately cariogenic, lactose is the least cariogenic fermentable sugar [ 2 ]. About 18.1% of daily protein intake is provided by milk and dairy products [ 3 ].…”
