Chilli (Capsicum annuum L.) holds a prominent position as a key spice crop, being widely utilized globally. Despite its agricultural significance, chilli is characterized by high moisture content (60–85%) at harvest, necessitating reduction to 8-12% for prolonged storage in a dehydrated form. However, it remains highly perishable, with a short shelf life and susceptibility to postharvest challenges such as fungal diseases, quality degradation, chilling injury, and rapid weight loss. Edible coatings have emerged as a solution to extend the postharvest shelf life of fruits and vegetables, enhancing mechanical handling properties and acting as a barrier to respiratory gases and water vapor. The possibility of hydrocolloid gums, such as gum arabic, as edible coatings has drawn interest. The purpose of this study is to determine whether an edible coating based on gum arabic (GA) can effectively preserve the quality of chiles when stored at room temperature. The goal of the research is to extend the storage life of chiles while improving their physiological and microbiological quality. A composite chitosan – gelatin (CH–GL) edible covering will be used to accomplish this. The effects of pure chitosan, cassava starch, gum arabica, and gelatin coatings on chillies will also be investigated in this study. In order to improve the marketability and resilience of chilli and possibly other horticultural commodities, the research aims to offer insights into the development of efficient and sustainable postharvest strategies by methodically evaluating the effects of these coatings on weight loss, firmness, colour retention, and nutritional content.

Banana variety of “Raja Lawe” and “Raja Labu” are found mostly in Banjarnegara, Central Java. To extend the shelf-life of these bananas, it is necessary to apply an appropriate technology. One of the alternatives is processing of bananas into flour. This study aims to determine the effect of blanching and immersion in several types of solutions on the sensory and physicochemical characteristics of “Raja Lawe” and “Raja Labu” banana flour. This study used an experimental method with a randomized block design. The factors consisted of banana variety (“Raja Lawe” (A1) and Banana variety “Raja Labu” (A2)), blanching effect (non-blanching (B0) and blanching (B1)), and the soaking solutions (sodium chloride (C1), sodium meta-bisulfite (C2), citric acid (C3), and water (C4)). The result of this research shows that in addition to the fresh consumption of the banana fruit “Raja Lawe” and “Raja Labu”, both bananas could be utilized as an intermediate product such as flour. Treatments of blanching and soaking in the solution could improve the quality of the banana flour made from the “Raja Lawe” and “Raja Labu”. The banana flour last longer and may reach broader market that increase the economic value of the fruits.

The widely cultivated tuber in Indonesia is Granola. The Granola tuber is appropriate for table potato and not for processing one. The cultivation of potato cultivar Atlantic for processed potato should be increased. This research aimed to examine the quality of potato cultivar Atlantic with organic farming and compare their properties with a conventional system. Potato tuber cultivar Atlantic was cultivated with conventional and organic fertilizer. Fertilization was performed following the practices of the local farmers. Three types of charcoal produced from wood, husk, and coconut shell were applied at three different concentrations. The cultivation was conducted in the greenhouse located in the area of potato cultivation, at 1,300 m above sea level. Selected quality parameters of potato tuber regarding the processing and nutritional properties were determined: weight of yield, moisture and ash content and brightness of flour that produced from the tubers. The present study shows that organic fertilizer and charcoal application could contribute to the quality of potato tuber cultivar Atlantic. However, application of organic fertilizer and charcoal during cultivation does not increase significantly of tubers ‘properties. Further research for cultivation in the field is required to confirm this result.
