Impact of ozonation process on the microbiological and antioxidant status of raspberry (Rubus ideaeus L.) fruit during storage at room temperature

Abstract: In this study the effect of the ozonation procedure on the microbiological and antioxidant status of raspberries stored at room temperature was investigated. During the study, it was found that ozonation with a dose of 8–10 ppm for 30 min, every 12 hours, for 3 days effectively reduced the growth of aerobic mesophilic bacteria and fungi. On the last day of storage, infestation with Botrytis cinerea for control fruit amounted 100%, while for ozonated fruits it was only 12%. In addition, the ozonation process ha… Show more

“…Ozone also impacts microbiological composition of the plant material. As demonstrated by Piechowiak et al [19], the ozonation process makes it possible to significantly reduce microbial load while retaining the fine quality of the plant material. This is particularly important in the case of decontamination of plants grown in tropical climates as they are a frequent source of diseases brought to other climate zones.…”

“…To 1 ml of 100 µM 2,2-Di(4-tert-octylphenyl)-1-picrylhydrazyl, free radical (DPPH • ) radical solution (Sigma-Aldrich, Steinheim, Germany), 30 µL of plant extract was added. After 30 min of incubation in darkness, the absorbance was measured at 515 nm [43].…”

“…The raw materials are placed in a modified atmosphere enriched in ozone. Usually, products are periodically cooled with a specific ozone stream [39]. This method requires the use of devices intensifying the mass exchange between the disinfected product and the stream of gas produced.…”

“…Recent research indicates that ozonation can be used as an abiotic elicitor of plant defense mechanisms in low-processed food products of plant origin [39][40][41][42]. It can enhance the content of secondary metabolites and antioxidant activity.…”
