Impact of the magnetic field‐assisted freezing on the moisture content, water migration degree, microstructure, fractal dimension, and the quality of the frozen tilapia

Abstract: Tilapia, also known as the African crucian carp, is a freshwater farmed fish cultivated worldwide by the aquaculture industry. It has high economic value, and its data are supported by key scientific research. China is the world's largest tilapia farming and supplying country (China Agriculture Press, 2020). Magnetic resonance imaging technology refers to the use of nuclear magnetic resonance principles. Through spatial coding technology, the radio frequency signal emitted from hydrogen atoms is processed by a… Show more

“…
The Nile tilapia cichlid fish (Oreochromis niloticus L.), also called African crucian carp, is a fish cultivated by the freshwater aquaculture industry. It is the second most cultivated species of fish in the world, and its total production has increased by around 10% per year since 2001 and is expected to reach 128 million tons in 2030 (Wei et al, 2021). To cope up with the increasing production of this species, better feed formulations should be provided to meet increasing feed requirements at different growth stages (Xia et al, 2021).

“…In recent years, magnetic field‐assisted freezing technology has gained considerable attention for its numerous advantages in the freezing process. These encompass enhanced freezing speed, control over ice crystal characteristics (size, shape, distribution) and an overall improvement in product quality (Wang et al ., 2022; Wei et al ., 2022). Magnetic field‐assisted freezing technology has been shown to effectively preserve the quality attributes of products, including colour, flavour, taste and texture (Zhu et al ., 2023).…”
