Abstract:SummaryThis work investigated the effect of bacterial cellulose nanocrystals (BCNCs)‐gelatin (GelA)/cinnamon essential oil (CEO) emulsion coatings (BCNCs‐GelA/CEO) on the shelf‐life extension of button mushrooms (Agaricus bisporus).
