Due to the similarity of the morphology of the granules of this starch, X-ray diffractogram and FT-IR spectrum of the starch from the fruit of S. edule with other starches of industrial relevance and its wide availability, it has been used to obtain microencapsulates of cinnamon oleoresin [10] and for the generation of nano bers by electrospinning [11]. Porras-Saavedra et al [11] found that combining S. edule starch with PVA forms highly water-soluble nano bers, making its application possible for processes where biodegradable systems are required under hydrophilic conditions.…”
