Inhibition of bongkrek acid and toxoflavin production in tempe bongkrek containing Pseudomonas cocovenenans

Abstract: Tempe bongkrek was prepared from partially defatted coconut by fermentation with the mould Rhizopus oligosporus. The addition of 2% sodium chloride decreased but did not inhibit formation of bongkrek acid by Pseudomonas cocovenenans strain ITB in either coconut culture medium (CCM) or tempe bongkrek, while 2% sodium chloride or acidification of CCM to pH 4.5 with acetic acid inhibited formation of toxoflavin. Toxin formation by three strains of Ps. cocovenenans in tempe bongkrek was inhibited by the combinatio… Show more

“…In addition to its toxicity related to food poisoning (Buckle & Kartadarma, 1990), TXF has been noted for its strong antibiotic activities (Gwynn et al, 1988;Nagamatsu et al, 1993). Furthermore, TXF (>0.5 yug ml-') was reported to suppress the growth of lymphocytes and other blood cells (Yue, 1992) and to induce mutation of both plant and animal cells (Yue, 1989 (Cocks et al, 1993) were not altered by the calcium entry blockers including nifedipine, indicating that U46619 contracts vascular tissues mainly through the release of intracellular calcium.…”

“…This scenario is exemplified in Tempe bongkrek, a dish-derived from coconut and commonly available in Southeast Asia. This product is derived from coconut press cake fermentation using fungus Rhizopus oligosporus (Buckle and Kartadarma, 1990 ).…”
