“…Aspergillus niger contains 10% chitin in the cell wall, and fungi that have chitosan as one of their cell wall components are more resistant to externally delivered chitosan (Beauvais et al, 2014;Beauvais & Latg e, 2018). According to Wang et al (2015) and Lichter et al (2002), infection of this pathogen in fruits is characterised by softening of the infected site followed by the development of a dark mould that corresponds to the fructification structures of the fungi. These changes were more intense in uncoated and in strawberries coated with glycerol, which confirms the importance of chitosan-based edible coatings in retarding fungal growth.…”
