Intake of dehydrated apple enriched by mandarin juice by vacuum impregnation reduces oxidative stress induced by tamoxifen in rats

Abstract: Fruit derived products are an emerging area within functional foods. Recently, we have developed an apple snack rich in flavonoids from mandarin juice by using vacuum impregnation and air drying technologies (1) . The product can combine the beneficial effect of both sources into one food item, or even enhance the beneficial compounds in the juice by protecting them through inclusion into a food structure. We have conducted an experimental study to evaluate the effects of this foodstuff consumption in decreas… Show more

“…Li et al [122] confirmed the anti-inflammatory effects of tomato juices containing lycopene in cardiovascular system. The results of other studies showed that CRP, TNF-α and IL-6 were significantly reduced after consumption of a new food product containing mandarin juice [123] and red orange juice in subjects at cardiovascular risk [124]. Our results show that SBJ consumption led to a significant decrease of inflammatory markers, especially CRP (p < 0.001) and IL-6 (p < 0.05).…”

“…In the literature, there are few reports on vegetable snacks compared with the large amount related to probiotic fruit snacks (Fito et al ., 2001; Betoret et al ., 2003, 2012; Codoñer‐Franch et al ., 2013). The most studied were apple‐based fortified snacks due to their optimal porous matrix for the incorporation of probiotics and bioactive compounds.…”
