Abstract: Abstract:Citrinin is a kind of mycotoxin, which is produced during Monascus fermentation to produce Monascus Pigments.Studies have shown that citrinin has certain nephrotoxicity and hepatotoxicity, which can cause tumor, induce mutation and so on.
