Inventions on phosphates for chemical leavening

Abstract: Summary Baking powders contain leavening acids that activate gas‐releasing agents such as sodium bicarbonate. This is a review of the patent literature on phosphate‐based leavening acids developed between 1856 and 2019. Overall, 174 patented inventions were found on 28 phosphate‐based compounds, which corresponded to more than half of the inventions disclosed on leavening acids. Inventors had a strong interest in monocalcium phosphate, sodium acid pyrophosphate and, to a lesser extent, sodium aluminium phospha… Show more

“…Not less than 65 nonphosphate leavening acids were mentioned in the patent literature, including 15 that were not patent‐protected (Table 1). That number is much higher than 28 phosphate‐based leavening acids (Gélinas, 2022b). Lactates and tartrates were the most popular with 36 and 27 patents, respectively, followed by 17 patents on sulphates, 13 on lactones and eight on hydrochloric acid.…”

“…This report is a follow‐up to recent literature reviews on baker's yeast substitutes (Gélinas, 2021), including gas sources (Gélinas, 2022a) and phosphate‐based acid‐reacting materials (Gélinas, 2022b). Overall, this article presents the long‐term evolution of phosphate‐free leavening acids according to patents claimed by skilled inventors for about two centuries.…”
