Investigating thermal denaturation kinetics of 7S and 11S proteins and lipoxygenase in soymilk through ohmic heating

Abstract: The purpose of this study is to investigate denaturation kinetics of 7S and 11S proteins as well as lipoxygenase in soymilk during ohmic heating treatment.
