Investigation of polyviologens as oxygen indicators in food packaging

Abstract: A triggered oxygen indicator, formulated from a combination of electrochrome, titanium dioxide and EDTA, was evaluated for use in food packaging. Methylene blue was not an ideal electrochrome due to its slow reduction to the leuco form and fast subsequent oxidation by oxygen present at low concentrations, <0.5%. Polyviologen electrochromes showed much faster reduction after exposure to UV light.Thionine and 2,2'-dicyano-1,1'-dimethylviologen dimesylate, which have more anodic reduction potentials compared to m… Show more

“…Methylene blue suffers from a slow reduction to its leuco form and a fast subsequent oxidation by oxygen present at low concentration; therefore, Hay et al [187] have chosen indicators which showed a much faster reduction after UV exposure, namely 2,2′-dicyano-1-1′-dimethy-4,4′-dipyridinium dimesylate and thionine ( 4b and 5b , respectively, Fig. 3).…”

“…Chemical CO2 sensors are in corporated with polymer or solid electrolytes and can be made portable to fit into microelectronicbased sys tems 49,50 . For the detection of O2, colorimetric meth ods based on pHbased dyes such as methylene blue, thionine and polyviologen electrochromic compounds were developed 51 . Many different types of O2 sensors are also available that adopt electrochemical, infrared, ultrasonic and laser technologies 52 .…”

“…A simple O 2 indicator system causes a colorless reduced species of methylene blue to revert to the original blue color with O 2 contact. This system had slow reduction and fast oxidation by O 2 compared with a polyviologen (electrochrome, titanium dioxide and EDTA) indicator with more anodic reduction potential to detect O 2 up to 4% (Roberts et al ., 2011).…”
