The aim of the present study was to obtain aroma extracts from Iberian ham using supercritical carbon dioxide as the extraction technique of volatile compounds. After extraction, it was concluded that larger numbers and higher concentrations of volatile compounds were achieved at 40 °C temperature and at 0.50 g/mL density (91 atm pressure). Identification of volatile compounds using mass spectrometry yielded 87 and 35 compounds in the extracts obtained at 40 °C (91 atm) and 60 °C (129 atm), respectively. All substances belong to different chemical classes (aldehydes, ketones, alcohols, aliphatic hydrocarbons, aromatic hydrocarbons, carboxylic acids, lactones, esters), which have already been studied by other authors in Iberian ham. However, 41 of the identified compounds have never been found in this product. Perhaps this is due to the particular solvent selectivity of supercritical carbon dioxide for extracting substances such as hydrocarbons, ketones, and alcohols.

This review presents more than 260 naturally occurring (as well as 47 synthesized) neo fatty (carboxylic) acids, neo alkanes, and their analogs and derivatives, isolated and identified from plants, algae, fungi, marine invertebrates, and microorganisms, that demonstrate different biological activities. These natural metabolites are good prospects for future chemical preparations as antioxidants, and also as anticancer, antimicrobial, and antibacterial agents. Described also are some synthetic bioactive compounds containing a tertiary butyl group(s) that have shown high anticancer, antifungal, and other activities. Applications of some neo fatty (carboxylic) acid derivatives in cosmetic, agronomic, and pharmaceutical industries also are considered. This is the first review to consider naturally occurring neo fatty (carboxylic) acids, neo alkanes, and other metabolites containing a tertiary butyl group(s) [or tert-butyl unit(s)].

Single step extraction and derivatization of intramuscular lipids for fatty acid Ultra Fast GC analysis: application on pig thigh

Two different methods for single step transesterification from pig meat without fat extraction have been tested. Freeze-drying of the meat with and without anhydrous salt, followed by a base-catalyzed transmethylation (KOH/MeOH) was carried out. Both methods were compared with the standard Folch procedure of fat extraction followed by transmethylation. The methods were tested on a complete sample set of biceps femoris of pig thigh, used for the production of dry-cured ham. The set was divided in three subgroups according to total fat content. Both derivatization protocols on freeze-dried pork muscle were proven to be a valid alternative to the Folch procedure for FAME analysis. Freeze-drying method offered several advantages in comparison with the Folch procedure, including a lower solvent requirement, and process temperature, as well as considerable saving of time. In freezedrying, the addition of an anhydrous salt (Na 2 SO 4 ) gave more friable samples which resulted in higher yields for some fatty acids, particularly evident in the case of tissues with high lipid content.
