Abstract: The aims of this study was to determine the physicochemical characteristics  and to know the antioxidant activity of chitosan parrot fish scales (Scarus sp.). The test parameters used in this study include color, particle size, moisture content, ash content, nitrogen content, degree of deacetylation, viscosity, molecular weight and antioxidant activity.
