Abstract:Ikan toman merupakan salah satu jenis ikan air tawar yang memiliki nilai ekonomis dan bergizi tinggi. Siomai ikan termasuk produk yang mudah mengalami kemunduran mutu mikrobiologis sehingga memiliki daya simpan yang rendah.
