“…Crab shells are mostly composed of 20-30% chitin, 30-40% protein, 30-50% ash (mainly calcium carbonate) and a small amount of liquid and pigment, which varies with species, season of catching, body parts, sex differences, etc (Hajji et al 2014;Hamed et al 2016;Wang et al 2022;Burke et al 2023;Xing et al 2023). Crab gills were found to be with high content of protein (66.52±0.20%) and low in ash (10.47±0.05%) compared to carapace waste (25.50±0.10% of protein and 51.00±0.10% of ash) (Novikov et al 2023). It is said that the carapace of the freshwater crab Aegla cholchol contains most protein than the exoskeleton, pincers and legs, while the exoskeleton has the maximum ash content.…”
