LAB bacteriocin applications in the last decade

Abstract: In the early 2000s, the expectations about bacteriocins produced by lactic acid bacteria (LABs) were aimed at food applications. However, the effectiveness of bacteriocins against undesirable microorganisms opened endless possibilities for innovative research. In the present review, we collected a database including 429 published papers and 245 granted patents (from 2004 to 2015). Based on bibliometric analysis, the progress of bacteriocin research in the last 11 years was discussed in detail. It was found tha… Show more

“…The Cys9–Cys14 bond is conserved among the class IIa bacteriocins, as is the N-terminal YGNGV sequence, both structures being signatures of this family 26 . Despite recent progress in its production by recombinant technologies 32 , pure bioactive pediocin PA-1 is not commercially available at present time and commercial crude fermentation products such as ALTA 2341 ® (Quest International) 9 or freeze-dried pediocin-producing cultures like CHOOZIT ™ FLAV 43 (Danisco) must be used 33 . Total chemical synthesis of bioactive pediocin PA-1 has been attempted in the past but with limited success, due to yields below 1% after multiple purification steps 20 , 34 .…”

“…Significantly, bacteriocins production have been regarded as an important feature in the selection of probiotic strains. These genes were associated with the presence of useful probiotic characteristics, which play important roles in the food and pharmaceutical industries [15][16][17]. 2).…”

“…Therefore, bacteriocin has good performance in inhibiting the growth of a variety of pathogenic microorganisms and food spoilage bacteria. In the past decade or so, articles on the application of bacteriocins in biomedical fields accounted for most of those published [1], with the majority of these related to the study of bacteriocins produced by Gram-negative bacteria. Bacteriocin research on Gram-positive bacteria is still in its infancy and is mainly concentrated on lactic acid bacteria.…”
