Bacteriocins are ribosomally synthesized peptides or proteins possessing antibacterial activity against foodborne pathogens and spoilage bacteria. A novel bacteriocin, plantaricin LPL-1 was determined as a class IIa bacteriocin according to the YGNGV motif, and producer strain Lactobacillus plantarum LPL-1 was identified based on physio-biochemical characteristics and 16S rDNA sequence. The novel bacteriocin, plantaricin LPL-1 was purified by salt precipitation, cation exchange, gel filtration, and reverse phase high-performance liquid chromatography (RP-HPLC). The molecular mass of plantaricin LPL-1 was 4347.8467 Da by Matrix-assisted laser desorption/ionization time-of-flight mass spectrometry (MALDI-TOF-MS) analysis and entire amino acid sequence of plantaricin LPL-1 was VIADKYYGNGVSCGKHTCTVDWGEAFSCSVSHLANFGHGKC. Plantaricin LPL-1 possessed the merits of easy degradation by proteases, wide pH stability (2–10), high thermal stability (121°C, 20 min), surfactants stability and bactericidal activity against foodborne spoilage and pathogens bacteria. The mode action and membrane permeabilization of plantaricin was identified. The information of plantaricin LPL-1 indicated that it is not only a novel class IIa bacteriocin, but also a promising natural and safe biologic preservative for the food preservation industry.

A survey is presented concerning original research articles published in well-reputed scientific journals on the isolation of lactic acid bacteria (LAB) from cheeses worldwide, where researchers evaluated the bacteriocin production by such isolates in searching for novel functional peptides that can exhibit potential for biotechnological applications. Seventy-one articles were published in the period of study, with contributions being American (45%), Asiatic (28%), and European (21%), being Brazil-USA-Mexico, Turkey-China, and France-Italy the countries that contributed the most for each said continent, respectively. Most of the isolated LAB belong to the genera Enterococcus (35%), Lactobacillus (30%), Lactococcus (14%), and Pediococcus (10%), coming from soft (64%), hard (27%), and semi-hard (9%) cheeses, predominantly. Also, scholars focused mainly on the food biopreservation (81%) and pharmaceutical field (18%) potential applications.

Scharakteryzowano właściwości, strukturę oraz spektrum aktywności plantarycyn wytwarzanych przez niektóre szczepy Lactobacillus. Przedstawiono ich klasyfikację, mechanizm biosyntezy, modele działania na inne bakterie oraz stabilność. Plantarycyny są dość różnorodne pod względem właściwości fizykochemicznych, struktury i spektrum aktywności przeciwdrobnoustrojowej. Szczepy Lactobacillus plantarum zdolne do syntezy plantarycyn należą do mikroorganizmów najczęściej obecnych w fermentowanych produktach spożywczych, a także w napojach i innych wyrobach z dodatkiem mleka. Budowa cząsteczek, ich stabilność oraz mechanizm działania sprawiają, że plantarycyny charakteryzują się skutecznym działaniem bakteriobójczym. Ze względu na niewielką oporność organizmów patogennych na te substancje mogą być one alternatywą dla wielu stosowanych obecnie związków o działaniu przeciwdrobnoustrojowym. Plantarycyny wpływają na zahamowanie wzrostu drobnoustrojów chorobotwórczych, a w konsekwencji na poprawę zdrowia człowieka. Z uwagi na coraz większe zainteresowanie produktami naturalnymi plantarycyny mogą w przyszłości znaleźć zastosowanie w różnych gałęziach przemysłu. Wyniki badań dotyczące ich wykorzystania mogą stać się podstawą do projektowania efektywnych preparatów probiotycznych, kultur starterowych do produkcji fermentowanej żywności czy nowych metod zabezpieczania żywności, co w konsekwencji wpłynie na poprawę zdrowia i jakości życia człowieka.
