Fenugreek seeds analyzed by Suliema et al (2008) contained 82.3% unsaturated fatty acids, and were most abundant in linoleic acid (43.2%), followed by α-linolenic acid (22%) and oleic acid (16.7%). “…Several coumarin compounds have been identified in Fenugreek seeds as well as a number of alkaloids (e.g., trigonelline, gentianine, carpaine), also contains 5.5-7.5% lipids constituting mainly of neutral lipids (85%) followed by phospholipids (10%) and glycolipids (5%). Similarly Sulieman et al, (2008) analyzed the composition of fatty acids in Sudan fenugreek and El-Sebaiy and El-Mahdy (1983) analyzed fatty acid composition in Egyptian fenugreek also found less content of linolenic acid as compared to present study. However, content of erucic acid (9.7%) was higher, but results of present study a lower ER value, thus a lower conversion of oleic acid (18:1) to eurcic acid (22:1) ( Table-4).…”
