Cheonggukjang, a soybean paste fermented with B. licheniformis-67 prevents weight gain and improves glycemic control in high fat diet induced obese mice

Abstract: In this study, we investigated the anti-obesity effects of soybean paste—Cheonggukjang, fermented with poly gamma glutamic acid producing Bacillus licheniformis-67 in diet induced obese C57BL/6J mice. Forty male C57BL/6J mice aged 4 weeks were divided into four dietary groups; normal diet control, high fat diet control, high fat diet containing 30% of unfermented soybean and high fat diet containing 30% Cheonggukjang fermented with Bacillus licheniformis-67. After 13 weeks of dietary intervention the mice were… Show more

“…In one such study, solid state fermentation of soybean with B. amyloliquefaciens resulted in production of 1-Deoxynojirimycin, a potent alpha-glucosidase inhibitor ( Cai et al, 2017 ). On similar lines, 13 weeks of dietary intervention with B. licheniformis 67 fermented soybean paste significantly prevented obesity related parameters in diet induced obese C57BL/6J mice ( Choi et al, 2016 ). Fermented soybean fed group displayed lower values for blood glucose, insulin, serum and hepatic lipid profile, and body weight compared with high fat diet control group.…”

“…PPARα is an important transcription factor that is known to activate the expression of CPT1α, ACOX, UCP-2 and UCP-3 (Rakhshandehroo, Knoch, Müller, & Kersten, 2010). The ratelimiting enzyme for β-oxidation are CPT1α and ACOX that are present in mitochondria and peroxisomes, respectively (Choi et al, 2016). UCPs are proteins involved in energy metabolism.…”

“…The consumption of chungkookjang fermented with B. licheniformis potentiates glucose-stimulated insulin secretion and also improved insulin sensitivity in partially pancreatectomized rats, a lean type 2 diabetic animal model [ 7 , 10 ]. In addition, the intake of chungkookjang fermented with B. licheniformis enhances glycemic control in obese mice and decreases body fat mass [ 11 ]. However, B. licheniformis is not registered as a food ingredient by the Korea Food & Drug Administration due to possible toxicity.…”
