Making Sense of Making Meat: Key Moments in the First 20 Years of Tissue Engineering Muscle to Make Food

Abstract: Cultured/clean/cell-based meat (CM) now has a near two decade history of laboratory research, commencing with the early NASA-funded work at Touro College and the bioarts practice of the Tissue Culture and Art project. Across this period the field, or as it is now more commonly termed, the “space,” has developed significantly while promoting different visions for what CM is and can do, and the best mechanisms for delivery. Here we both analyse and critically engage with this near-twenty year period as a product… Show more

“…Cultured meat, in-vitro cultivation of animal cells, is being researched for the last 20 years as a sustainable alternative to the common meat production using slaughtered animals (Stephens et al, 2019). For the first time it has now been proposed to use insect cell cultures instead of mammalian or avian cell cultures as they seem to require fewer resources and are more resilient to changes in environmental conditions (Rubio et al, 2019).…”

“…This has resulted in confrontations between those who believe that meat is an essential component of the human diet equated with good nutritional qualities, strength and masculinity (5), and those who argue that the long period of dependence on livestock as food should be assigned to the past (6). The creation of cultured meat leading to cellular agriculture is the way of resolving these tensions emerging after 20 years of scientific research and recent investment waves (7).…”

“…The common terms used for this type of meat production include lab meat, cultured meat, in vitro meat, artificial meat, synthetic meat and for those keen to promote the industry, 'clean meat'. Nomenclature for cell-based meat is widely debated, and for an excellent discussion on the various terms and their history and socio-political connotations, see Stephens et al (2019). Producers, investors and advocates of cell-based meat production prefer to use the term 'clean meat' in order to promote consumer acceptance as it has positive connotations (Bryant and Barnett, 2019).…”
