Mass spectrometry in food proteomics: a tutorial

Abstract: In the last decades, the continuous and rapid evolution of proteomic approaches has provided an efficient platform for the characterization of food-derived proteins. Particularly, the impressive increasing in performance and versatility of the MS instrumentation has contributed to the development of new analytical strategies for proteins, evidencing how MS arguably represents an indispensable tool in food proteomics. Investigation of protein composition in foodstuffs is helpful for understanding the relationsh… Show more

“…The continuous and rapid evolution of proteomic approaches has turned them as efficient tools for the characterisation of food-derived proteins. Owing to the impressive increase in the performance and versatility of MS instrumentation, the development of novel analytical strategies for the identification, characterisation and determination of allergens represents a valuable platform for food allergenomics [124][125][126]. MS platforms are normally coupled to a LC system that counts several advantages, such as high accuracy, sensitivity, specificity and reproducibility, which have greatly contributed for their application in the field of food allergen analysis [126,127].…”

“…In the last 10-15 years, the increase in the performance and adaptability of instrumentation in mass spectrometry has enormously contributed to the development of new strategies in food analysis, rendering MS as one of its main tools (131). The quality of the information gained by MS is infl uenced by sample preparation procedure, type of mass spectrometer and analyst's skills.…”
