Metabolic Profiling of the Oil of Sesame of the Egyptian Cultivar ‘Giza 32’ Employing LC-MS and Tandem MS-Based Untargeted Method

Abstract: Sesame (Sesamum indicum L.) is a global oil crop. Sesame oil has been regarded as functional oil with antioxidant properties in several in vivo studies but little is known about its minor fraction. In this line, this study figures out the profile of the polar fraction of Egyptian cultivar Giza 32 sesame oil (SG32 oil) employing reversed-phase high-performance liquid chromatography coupled with diode array detection and electrospray ionization-quadrupole-time-of-flight-mass spectrometry and tandem MS. The chara… Show more

“…The fatty acid (FAs) profile is an important marker of the nutrition quality of oil; sesame seed oil belongs to the oleic–linoleic acid group [ 58 ]. The fatty acid profiles of sesame seeds roasted with different methods are shown in Table 2 .…”

“…Otherwise, some compounds have been identified here for the first time. With a molecular formula of C 27 H 30 O 15 (peak 15) at 10.21 min, the compound was identified as luteolin hexoside deoxyhexoside in agreement with its m/z in the source fragment 285 according to Mekky et al, who previously described it in sesame oil [ 40 ]. At 9.78 min (peak 14) with the m/z 717 and the predicted molecular formula of C 36 H 30 O 16 , the detected compound was proposed to be salvianolic acid as previously described in basil [ 38 ].…”

“…The sample was ready at a concentration of 1 mg/mL in HPLC-grade methanol, and the injection volume was 10 µL. The metabolites characterization was according to the strategy proposed by several studies [ 47 , 49 , 89 ]. Metabolite assignments were achieved by the observation of the retention time (RT) for each candidate alongside the mass to charge ( m / z ) observed in the positive mode [M+H]+, molecular formula, mass score not less than 80%, error ± 3, and major MS/MS fragments.…”
