The aim of the paper is to study the process of combined drying of lemon waste and to substantiate the prospects for the implementation of the process of drying lemon waste using IR-convective heat supply to intensify moisture transfer due to preliminary IR treatment with powerful pulsed radiation. As a result of theoretical and experimental studies, the modes of IR-convective drying have been determined by studies. The influence of the heat flux emitted by IR lamps on the object of study has been studied, depending on the variation of the increase in heat flux in the size of the distribution of emitters, respectively, lemon peel and seeds, processing time. Analyses have shown that in the proposed method, when exposed to IR rays, intensive removal of moisture from the entire volume of the material occurs.
