Microbiological assessment of kunun-zaki marketedin Abuja Municipal Area Council (AMAC) in The Federal Capital Territory (FCT), Nigeria

Abstract: Forty-one (29)kununThe high bacterial load of most of the samples can be attributed to the poor hygienic practices of the handlers and possible contamination from the utensils and water that were used for processing of the beverage. The presence of these organisms could be a matter of serious concern as these organisms are involved in some health implications causing various diseases.

“…The present study revealed that most of the samples purchased contained high bacterial count ranging from 3.0 × 10 3 cfu/ml (control) to 2.2 x 10 7 cfu/ml (HSP2) which is in agreement with the findings of [30] who reported bacterial count ranging between 5.1 × 10 3 cfu/ml to 2.0 × 10 8 cfu/ml in kunun-zaki sample. Similarly, [32] and [33] reported a total bacterial count ranging from 5.0 × 10 4 cfu/ml to 2.0 × 10 6 cfu/ml and 1.0 × 10 2 cfu/ml to 8.9 × 10 4 cfu/ml respectively in kunun-zaki.…”

“…Sabon-Tasha had the highest TBC of 3×10 4 6 cfu/mls to 81.67×10 6 cfu/mls obtained by [4]. But however, it fell within the range of findings by [1], [8], [9], and [11] 4 cfu/mls and 5.0×10 4 to 1.79×10 5 cfu/mls, and. The high bacteria count therefore might be as a result of unclean water used in the preparation of the kunu, poor hygienic practice, exposing the kunun-zaki to dust and flies.…”

“…These organisms are opportunistic pathogens that can cause disease in immunosuppressed people, they cause diseases such as respiratory and urinary tract infections (UTI), diarrhea, gastroenteritis, wound, etc. The contamination may be as a result of cross-contamination unnoticed or through poor hygienic practice by the food handlers [1], [5], and [6].…”
