Microbiological quality of meat and fish provided by family farming to school meals

Abstract: Considering that some products of animal origin supplied for school meals in the municipal network of Francisco Beltrão, PR are from family farming, this research aimed to evaluate the quality of meat products and fish samples supplied by family agroindustry through microbiological analysis, as well as to check the items that assess the hygienic-sanitary conditions of the agribusinesses.
