Microencapsulation of DHA Algal Oil by Spray Drying

Abstract: Abstract-The aim of this study is to evaluate and optimize the influence of process conditions on the microencapsulation of DHA algal oil by spray drying, while using whey protein isolate (WPI) and maltodextrin (MD) as wall material.
