Abstract: This study aimed to characterize and microencapsulate soybean seed coats phenolic compounds by spray‐drying, evaluating physicochemical properties and storage stability. Different extraction methodologies were used to obtain crude extract (SCE), ethyl acetate fraction, water fraction, and bound phenolic extract.
