As análises microscópicas são realizadas para detectar a presença de matérias estranhas, sujidades, fraudes e identificar elementos histológicos nos alimentos, possibilitando discutir a necessidade de implementação de ações de controle de qualidade. Neste trabalho foi avaliada a presença de substâncias estranhas em alimentos, utilizando a metodologia proposta pelo US-FDA, AOAC e IAL. Entre 2019-2021, foram realizadas 663 análises em 311 amostras de alimentos, com taxa de aprovação foi de 95%. Condimentos e temperos foi a categoria de alimentos com maior porcentagem de amostras irregulares (35,29%), seguido de doce de fruta (17,65%) e polpa de fruta (11,76%), sendo identificados ácaros, fragmentos de pelo de roedor, insetos e larvas inteiros e fragmentados e impurezas totais, que excediam os valores estabelecidos pela legislação brasileira. Os resultados apontam falhas nas Boas Práticas Agrícolas e de Fabricação além da necessidade de melhorias no controle de qualidade na produção de alimentos.
