Abstract:Background and objectives
The production of precooked rice has mainly been applied to long rice varieties, while japonica varieties are significantly less represented, especially Spanish varieties. The aim of this paper was to model the water mass flow process in precooked round‐shaped rice (Bahía‐Senia) for the soaking (Peleg model) and drying phases (drying by hot air and by combined hot air and microwaves, Fick, Midili, and Page models). Optical and mechanical properties after drying were recorded. Cooking … Show more
“…In recent years, the application of combined drying technologies such as microwave-assisted and hot air drying in rice drying has attracted the attention of researchers. [110][111][112] The combined hot air and microwave-assisted hot air drying has uniform heating and a fast drying speed, which can not only make up for the shortage of long drying times with hot air but also reduce energy consumption so that the dried products have good color and rehydration. 112 However, there are few studies on its effects on the quality characteristics and bioactive components of black rice.…”
Compared to brown and white rice, black rice is rich in bioactive components, including γ-oryzanols, γ-aminobutyric acid, phenolic compounds, and anthocyanins, which makes it highly valuable for development and use.
