Modification of Storage Protein Content and Quality in Legume Seeds

Abstract: Worldwide, legume seed proteins represent a major source of amino acids for human and animal nutrition. However, they are notoriously deficient in sulphur-containing amino acids. Therefore attempts to overcome this imbalance are nutritionally relevant, and the concept of legume seed protein quality has been extended to technological and health-oriented aspects. This review focuses on the state-of-the-art of the conventional and innovative methodologies for the improvement of legume seed storage protein content… Show more

“…Diversifying protein sources in food intake, particularly increasing the consumption of vegetable proteins could reduce the risks to health and to the environment associated with the production and the excessive consumption of animal proteins in Western countries [1,2]. However alone, each vegetable protein, may lack certain essential amino acids such as sulfur amino acid, threonine or/and lysine [3].…”

“…Promoting vegetable protein sources in human food intake can help efforts to prevent health risks associated with an excessive consumption of animal-based foodstuffs and reduce the ecological footprint of animal production (Duranti and Scarafoni, 1999;FAO, 2013). However, vegetable proteins such as legume proteins are deficient in some essential AA (i.e., sulfur AA; Boye et al, 2010).…”

“…Very often they represent a necessary supplement to other protein sources (Duranti and Gius, 1997). Therefore, the dietary importance of legume seeds is expected to grow in the years for the proteins (and other nutrients) demand of the increasing world population and the need of reducing the risks related to consumption of animal food sources, especially in the developed countries (Duranti and Scarafoni, 1999). Recently, it is being acknowledged that food proteins are not only a source of constructive and energetic compounds as the amino acids, but also, they may play a bio-active role by themselves and/or can be the precursors of biologically active peptides with various physiological functions.…”
