Multivariate Analysis Coupled with M-SVM Classification for Lard Adulteration Detection in Meat Mixtures of Beef, Lamb, and Chicken Using FTIR Spectroscopy

Abstract: Adulteration of meat products is a delicate issue for people around the globe. The mixing of lard in meat causes a significant problem for end users who are sensitive to halal meat consumption. Due to the highly similar lipid profiles of meat species, the identification of adulteration becomes more difficult. Therefore, a comprehensive spectral detailing of meat species is required, which can boost the adulteration detection process. The experiment was conducted by distributing samples labeled as “Pure (80 sam… Show more

“…This is meat produced by in vitro cell cultures of animal cells [ 54 ]. The type of meat and its source e.g., due to the adulteration of meat products [ 55 ], as well as the form of its processing are also important. The most controversial health aspect of meat consumption is related to the likely carcinogenic effects of red and processed meat [ 56 , 57 ], as well as the risk of ischemic heart disease [ 58 ].…”

“…The adulteration of meat by replacing or mixing halal meat with non-halal meat can cause various problems such as (1) religious and belief problems due to the substitution of halal meat, such as beef with non-halal meat such as rat meat, dog meat, wild boar meat and pork. [4][5][6], (2) health-related problems [3] and (3) allergenic reactions [7]. The nutrition and safety of meat are directly related to people's health and quality of life [8].…”
