Natural Occurrence of Enantiomeric and meso‐Astaxanthin 1. Ex Lobster Eggs (Homarus gammarus)

Abstract: Astaxanthin (1; 3,3′‐dihydroxy‐β,β‐carotene‐4,4′‐dione) isolated from lobster eggs (Homarus gammarus) was unexpectedly found to be a mixture of all three optical isomers as determined by HPLC. analysis of the corresponding diesters of (–)‐camphanic acid. This is the first finding of meso‐astaxanthin and a meso‐carotenoid in general in nature.

“…Astaxanthin (3,3 0 -dihydroxy-,-carotene-4,4 0 -dione), AXT, shown schematically in Figs. 1(a)-(c), is a carotenoid occurring in nature as three optical isomers [3S,3 0 S, 3R,3 0 S, meso and 3R,3 0 R (SS, RS and RR) in various ratios; Rønneberg et al, 1980;Renstrøm et al, 1982]. It is present in shrimps, crabs and lobsters, as well as in many invertebrate animals, where interaction with a protein can cause the astaxanthin molecule to change its colour from an orange/red colour in the unbound form to a deep slate blue/black.…”

“…Sehr uberraschend waren daher neuere Befunde, die gezeigt haben, dass nicht nur das (S, S')-Isomere la, sondern alle optischen Isomeren dieses Carotinoides in der Natur vorkommen; so wurden z. B. aus Hummereiern alle optischen Isomeren des Astaxanthins isoliert [3]. Schon fruher war in einer Hefe (3R, 3'R)-Astaxanthin (le) aufgefunden worden [4].…”

“…Namely, astaxanthin in crustaceans and marine fishes exists as a mixture of three stereoisomers at C3 and C3′-positions [15,16]. Zeaxanthin [17], lutein [18], and tunaxanthin [19] in marine fishes also consist of these stereoisomers.…”
