Neoculin as a New Taste-modifying Protein Occurring in the Fruit ofCurculigo latifolia

Abstract: A unique taste-modifying activity that converts the sense of sourness to the sense of sweetness occurs in the fruit of the plant Curculigo latifolia, intrinsic to West Malaysia.
