Novel pearl millet couscous process for West African markets using a low‐cost single‐screw extruder

Abstract: Traditional West African pearl millet couscous products are popular; however, their preparation is laborious, time‐consuming and energy‐demanding, involving agglomeration, steaming, drying and sieving steps.
