Nutrient Composition and Aflatoxin Contamination of African Sourced Peanuts and Cashew Nuts: Its Implications on Health

Abstract: Edible nuts are popular worldwide based on their varied attributes such as desirable taste, high nutritional value as well as some health benefits. Globally, the most popular edible nuts are groundnuts or peanuts, almond, cashew nut among others. Due to the rich nutritional composition of nuts, they tend to be prone to contamination by toxigenic fungi which could ultimately results in the release of fungal metabolites known as mycotoxins into nuts. In view of the nutritional composition of nut and its high sus… Show more

“…Compared with pre-harvest, aflatoxin contamination is particularly severe during storage, especially in areas and years with continuous rain during the peanut harvesting period and peanut aflatoxin levels exceeding the standard are often observed. The contamination subsequently leads to compromise the quality and endanger the safety of peanut consumption as aflatoxins are the most toxic and carcinogenic compounds among the toxins [ 4 , 5 ]. To date, lots of biological strategies to battle contamination have been developed with limited success [ 6 , 7 , 8 ].…”

“…). Aflatoxin contamination is found in many regions around the world, but is especially prominent in many tropical and subtropical regions as climate conditions in these regions (temperature and humidity) are optimal for fungal growth and aflatoxin production (Adetunji et al 2021;Kamika et al 2014).…”

“…Aflatoxin concentrations in groundnut (products), in reality often exceeds the set MLs (Adetunji et al 2021). Lien et al (2019) collected 1089 samples of groundnut and groundnut products (candy, butter, etc.…”
