“…Παρόλα ταύτα, ακόμα, δεν έχουν προκύψει τα ποιότητας(Selmane et al 2008). ΗKrasnoshtanova (2010) κατάφερε να αυξήσει την ενζυμική υδρόλυση παραπροϊόντων κρέατος με χρήση τεχνικών οξειδασών και υδρολασών.
