Ochratoxin A: Overview of Prevention, Removal, and Detoxification Methods

Lijuan Ding,
Meihua Han,
Xiangtao Wang
et al.

Abstract: Ochratoxins are the secondary metabolites of Penicillium and Aspergillus, among which ochratoxin A (OTA) is the most toxic molecule. OTA is widely found in food and agricultural products. Due to its severe nephrotoxicity, immunotoxicity, neurotoxicity, and teratogenic mutagenesis, it is essential to develop effective, economical, and environmentally friendly methods for OTA decontamination and detoxification. This review mainly summarizes the application of technology in OTA prevention, removal, and detoxifica… Show more

“…Despite minor structural differences in functional groups, the ochratoxins exhibit significant variations in toxicity, with OTA being the most potent [ 139 ]. An amide bond connects dihydrocoumarin and L-β-phenylalanine in its structure [ 140 ].…”

“…In recent years, there has been an increasing emphasis on the identification of various approaches aimed at reducing the contamination of food with OTA mycotoxin [ 9 ]. Currently, there is a lack of a universally accepted technique for the thorough detoxification of OTA.…”

“…After the absorption of the toxin from the gastrointestinal tract, binding to serum proteins (mainly albumin) follows ( 8 , 9 ). ΟTA is enzymatically hydrolyzed to the less toxic ochratoxin-α (OTα) by intestinal microbes, whereas the cytochrome P450 system in the liver is associated with the hydroxylation of OTA to various forms of OTA-OH ( 10 , 11 ). OTA is a major nephrotoxic agent, whereas it can also induce immunotoxic, genotoxic, neurotoxic, and teratogenic effects ( 7 , 12 ).…”
