Zein is considered a hydrophobic protein due to its high content of amino acids, such as alanine (10%), leucine (20%), and proline (10%), it is insoluble in water (Lucio et al., ) and is generally recognized as safe by the US Food Drug Administration (Chen & Jones, ).
