Optimization of a γ-aminobutyric Acid (GABA) Enrichment Process for Hokkaido White Rice and the Effects of GABA-enriched White Rice on Stress Relief in Humans

Abstract: To identify optimal conditions of GABA Enriching Equipment for making GABA enriched high eating quality whiterice (GABA rice), we measured the GABA contents in whiterice and performed sensory evaluation and volatile compounds analysis of cooked rice, using the Hokkaido rice cultivar Yumepirika. Quantity of GABA included in GABA rice following a 3-hours enrichment had much about 10 times of normal whiterice at 11. 4 mg/100 g of whiterice. Sensory and volatile analysis of cooked rice showed that GABA rice follow… Show more

“…Two 8-week intervention studies examined the effect of consuming GABA-enriched rice on sleep in healthy individuals. Yoshida et al ( 2015 ), studying healthy middle aged individuals with poor sleep, found a trend for improved feelings upon awakening in GABA rice (16.8 mg GABA in 150 g GABA rice/day) (vs. white rice−4.1 mg GABA in 150 g white rice/day) group at the 4th week of intervention and after 2 weeks of the intervention (i.e., at the 10th week). They did not find an effect of GABA rice on VAS sleepiness score.…”

“…The effects of GABA on other HRV parameters and subjective stress were not significant. Another study by Yoshida et al (2015) showed that 8 weeks consumption of GABA rice (16.8 mg GABA in 150 g GABA rice/day) improved subjective calmness and worry scores midway through the study at the 4th week of the treatment compared to white rice (4.1 mg GABA in 150 g GABA rice/day), however, these effects were not maintained. They also reported trends for reduced blood cortisol and increased adiponectin levels in GABA rice (vs. white rice) condition at the 8th week of the treatment.…”

“…However, transgenic rice cannot be sold in Japan. In E-mail: kkawaka@med.shimane-u.ac.jp addition, GABA-abundant sprouted brown rice is sold and a 'grain GABA-enriching device' to increase the GABA content of polished rice has been developed (6,7). In this study, the functionality of 'GABA-enriched brown rice' (GEBR) containing a high concentration of GABA was investigated with regard to its influence on BP by ad libitum ingestion in spontaneously hypertensive rats (SHR).…”

“…Four strains of LAB-namely N8, N9, N10, and N30-were cultured in an MRS liquid medium in a 96-well microplate at different NaCl concentrations (0, 1, 2, and 3% (w/v)), pH levels (2-9) and incubation temperatures (10,15,20,25,30, and 35 • C). After incubation at 28 • C for 72 h, the optical density (OD) at 600 nm was measured in a spectrophotometer (V-530, JASCO, Tokyo, Japan) to evaluate the growth.…”

“…Therefore, LAB is widely applied as starter cultures in fermented foods, probiotics, and/or biopreservative agents [16][17][18]. Additionally, it is known that some LAB can produce GABA [19][20][21]. It is well known that GABA is a functional non-protein amino acid that is synthesized from glutamate via decarboxylation due to an enzymatic reaction or through the degradation of polyamine [22].…”
