Optimization of brewing conditions for Tieguanyin oolong tea by quadratic orthogonal regression design

Abstract: Tieguanyin is one of the most consumed oolong teas because of its distinctive flavor. The brewing process is crucial for the flavor performance of traditional teas, thus the effects of brewing conditions, including water/tea ratio (R), brewing temperature (T), and time (S) on the sensory traits, chemical composition, and antioxidant activity of Tieguanyin tea infusion were investigated using quadratic orthogonal regression design. Results showed that R affected all the quality variables most, its reduction cou… Show more

“…Brewing tea is a skill that relies on a user's technique and experience. As different brewing methods can significantly impact the quality of tea [57], while factors such as the ratio of water to tea leaves, temperature, and steeping time [58] are also crucial for the flavor profile of the tea, reducing the barrier for novice users is essential in this context. These relevant studies provide support for this research.…”

“…Tieguanyin is a semi-oxidized oolong tea originated from Anxi county, Fujian province, China. Tieguanyin tea is popular in southern China and widely consumed in Southeast Asia due to its refreshing, brisk taste, mellow mouthfeel, and health benefits ( Cao et al, 2022 ). Non-volatile compounds account for the taste flavor of oolong tea, which are formed and accumulated over the enzymatic-catalyzed process (ECP) and enzymatic-catalyzed process (NCP).…”
