Optimization of extraction time and temperature for natural antioxidants of öküzgözü grape pomace using various solvent ratios

Abstract: Grape pomace, a press residue of winemaking process, has great usage potential in many fields because of its phenolic components such as anthocyanins, antioxidants and dietary fiber. In this study, it was aimed to determine most suitable parameters for production of food colorant from grape pomace (variety of öküzgözü) under different extraction conditions, thus utilising waste of wine production. The dried grape pomace was extracted at 3 various temperatures, 4 different periods and 5 different solvent ratios… Show more

“…Sigma Aldrich's kit was used to assess the total antioxidant capacity. The DPPH free radical's scavenging capacity of samples were determined follow the descriptions by Yeler & Nas (2021). The rate of hydroxyl radical clearance was calculated using the method of Tohma et al (2017) with some modification.…”

“…In general, enzymatic reaction will use some strong polar solvent to dissolve the substrate of the strong polarity. In general, some strongly polar solvents are used to dissolve strongly polar substrates in enzymatic reactions (Yeler & Nas, 2021), but enzymes are often inactivated in some strongly polar organic solvents, while ionic liquids with the same polarity can maintain their catalytic activity and stability. Therefore, ionic liquids are more suitable as solvents for enzyme-catalyzed reactions than organic solvents.…”
