Optimization of nutritional and non-nutritional factors involved for production of antimicrobial compounds from Lactobacillus pentosus SJ65 using response surface methodology

Abstract: Bacteriocins from lactic acid bacteria are ribosomal synthesized antibacterial proteins/peptides having wide range of applications. Lactobacillus pentosus SJ65, isolated from fermented Uttapam batter (used to prepare south Indian pan cake), produces bacteriocin having a broad spectrum of activity against pathogens. Optimization studies are of utmost important to understand the source of utilization and the conditions to enhance the production of metabolites. In the present study, an attempt was made to identif… Show more

“…A common feature of these microorganisms is their antagonistic activity against some pathogens such as salmonella spp., Escherichia coli , Listeria monocytogenes , Clostridium perfringens and Helicobacter hepaticus 6, 7, 8, 9, 10, 11. The capability of L. plantarum and L. reuteri in phytic acid hydrolysis is valuable in bread processing technology 12 .…”

“…Statistical experimental designs are the strongest techniques for the fast screening of important variables from a multivariable scheme and for the reduction of mistakes in determining the impact of distinct parameters 7,23,24 . The Plackett-Burman design was employed to evaluate the significant effect of the different components of starch nitrate medium on the production of antimicrobial agents from Streptomyces sp.…”
