Optimization of process variables for petha manufacture from chayote ( Sechium edule Sw.)

Abstract: Chayote (Sechium edule Sw.), a hairy climbing shrub, belongs to Cucurbitaceae family. It is native to mountains of Central America where it was first domesticated by Aztecs (Singh, Verma, Arya, & Muneem, 2002).
