Abstract:Objective: Sugarcane juice (Saccharum officinarum l.) is a natural source of liquid carbohydrates traditionally used for health and help with diabetes. The content of flavonoids, octacosanol, and saccharic compounds in sugarcane juice is proven to have antihyperglycemic activity, so it is safe to use by diabetics. Unfortunately, sugarcane juice is only stable for 4 h at room temperature. The study aimed to improve sugarcane juice's stability and obtain data on its antihyperglycemic effect.
