Introduction.The hypothalamus is the highest subcortical centre of the autonomic nervous system, maintains homeostasis [1], and affects the body's peripheral systems [2]. By stimulating inflammation in hypothalamic cells [3], homeostasis is disturbed under the influence of various external and internal factors. "Monosodium glutamate is a well-known food additive that stimulates appetite, improves the taste of food, and is considered relatively safe. However, many experimental studies have indicated the negative effects of monosodium glutamate on the body. For example, after four weeks of exposure to monosodium glutamate, histological specimens of mesenteric lymph nodes show the intensive formation of germinal centres, increased proliferation and differentiation of lymphoid cells, and an immune induction effect with increased proliferation of activated lymphocytes and their further differentiation into plasma cells [4].
